Happy New Year to everyone. As we kick off a new year, I think it is only right that I share a new recipe. I was in the mood for something easy for dinner tonight so I came up with this quick Lettuce wrap featuring ground beef and avocados.

If you have been following my Paleo food journey I am happy to say I can eat avocados again. Back in August it was one of the foods on my eliminated food items list. But, I am no longer having issues with them. Woo hoo! I hope you enjoy this recipe as much as my family did.

Ingredients

Instructions
  1. Heat oil over medium heat and saute onions until lightly browned on the edges.
  2. Remove from heat and cook ground beef in the same pan.
  3. Removed any extra fat from the pan and add in the onion and garlic and salt. Cook for 2-3 minutes and remove from heat.
  4. Add in grated carrots and stir well.
  5. Add in kalamatas for an extra tangy salty flavor profile.
  6. Add avocado cubes as you build your wraps with the Romaine lettuce.
